Ingredients: • 3 bundles of vermicelli noodles (112.5g), soak in warm water for 20 minutes. • 1 boneless chicken thigh (175g ), cut into strips • 2 large leaves of Chinese cabbage (Napa cabbage) • 2 eggs (season with a pinch of salt and white pepper) • 1/3 carrot, thinly shredded • 1/3 celery, thinly shredded • 2 small king oyster mushrooms, thinly shredded • 2 scallions, cut into sections • 2 cloves garlic, minced • Olive oil or other cooking oil • Salt • Dark soy sauce • Rice wine or Shaoxing wine • Sesame oil • White pepper powder • Oyster sauce • Chicken powder • Water
Chicken Marinade: (Marinate for 10 minutes) • 1 tbsp soy sauce • 1 tbsp rice wine or Shaoxing wine • A pinch of salt • A pinch of sesame oil • A pinch of white pepper • 1 tsp cornstarch
